Broccoli and Stilton soup

You will need:
2 Onions
1 Knob of butter
1 Large potato
140g Stilton freshly supplied by Spa Farm
400g Broccoli
1 pint of chicken stock/ or veg
½ pint of milk
And a splash of Spa Farm cream (optional – but recommended!)

Chop the onions and soften in butter in a pan for a few minutes.

Add the potatoes (peeled and diced) and broccoli (just the florets) and cook for a few more minutes.

Add the stock chicken/veg, then cover with lid and simmer for about 20 minutes.

Leave to cool for about 15 minutes, then whisk with a hand blender.

Add the stilton, milk and cream, heat gently stiring often, until the stilton is all melted, and soup is hot.

Season with pepper and serve with warm home made bread.
